Gluten free diet

I don't have a celiac disease, but I'm interested in the supposed health benefits of a gluten-free diet. Any personal experiences, recipes, and verdicts on the gluten-free experience would be much appreciated.

Interesting glutton fun fact:I was surprised to hear that most inexpensive brands of vodka are distilled from grain. If you want glutton free vodka distilled from potatoes (which I that all vodka was) you need to buy better quality vodka.
