If you ask me, I am always under-whelmed when it comes to BBQ. It always looks better than it tastes and always is less than expectations in my mind.

Make me see the light on all the who on BBQ!

The aussie style bbq has the meat largely speak for itself . Interestingly southern US style is gaining a following here .

Good Q is an art form. It’s quite a trick to cook a bad piece of meat for 10 hours and have come out juicy. I have made some of the best ribs I’ve ever eaten and the worst I’ve ever had. Cooked and prepared them exactly the same way both times. Subtle differences in cook temp, amount of smoke, mopping, even the humidity in the air can make or break good Q to bad. The meat quality has chanced over the years as well. With the advent of the food police, the pork industry has tried to change its image, “The other white meat”. Unfortunately today’s leaner pork doesn’t have the flavor or moisture content that the extra fat gave it. Needless to say BBQ is the only true American cooking style invented here by the slaves.

I make pulled pork for the majority of large gatherings with friends. Everyone raves about it. For my daughters HS graduation, I did 3 different styles of pulled pork sandwiches and there wasn't a stitch left at the end of the event. I even have one friend who will steal a chunk of BBQ at a party just so she can enjoy it at home for a couple of days. Love it, but couldn't eat it everyday.

Now, for a picture that will make you envious - here is how my pulled pork sandwiches look....

What kind of barbeques have you been going to?

Awesome! Carolina style? I went to a outdoor business meeting with lunch catered by a BBQ restraint , not bad. They had slaw available, everyone was putting it on the side on their plate, LOL. I said no, no, no, the slaw goes on the sandwich. The caterer smiled and looked at me with this grin that said, DAH. Northerners.

The BEST BBQ I've ever had was in North Dakota. Underrated. Those cowboys know how to light it up up there! And I've also tried favorable places in Houston and Memphis as well.

Why is this thread in the Success Forum category?

Was in Memphis a few years back. We went eat at one of those shows the profiled on the Food Network. It was good but I’ve had gas station BBQ better. Talked with some of the locals and they said Cental BBQ. When we got there the line was wrapped around the building and the food did not disappoint.

Personally I like my own when I have the time. Time to do it the right way. Low and slow and baby those smokers. Wanting a new smoker mine are giving up on me. Maybe Santa Clause will bring me one for Christmas.

Best BBQ ribs I ever had was at a restaurant just south of Cincinnati in Kentucky. They were cooked outside on a large grill.

Heck it was a spammer thread - All I wanted was to kill the SOB and create a fun thread. Never even checked what forum it was in. I guess I was somewhat preoccupied this past week.

Speaking of BBQ - Making a boston butt for tomorrows neighborhood halloween party. Will have to do it as a crock pot quick cook as time is not on my side. Somehow, the day snuck up on me. Debating on making my traditional with Sweet Baby Rays and Sticky Fingers Carolna mix or splitting it and also having a vinegar based BBQ. Vinegar BBQ was a huge hit at our daughters graduation party. Had never made it before, so lots of research went into it. I had made three batches, the vinegar one was the first to go. BBQ over rated? yes, unless I am making it....on point.

Crock Pot Q is good when you have to, or when the weather is bad and you have a craving for some pulled pork or brisket sandwiches. You gotta have the slaw though.

That Sticky Fingers Carolina is that sold in wide distribution like Sweet baby Rays?

To me BBQ is putting ones personal spin on it, like any kind of cooking. If someone likes it good, if they don't still good. I've been disappointed in my own at times.

The original question is like asking if steak is over rated. Would depend on the cut, the seasoning, how it's cooked and many other factors.

So- Southern BBQ. Let's see, would that be Tennessee, Georgia, Texas, Carolina, Louisiana, Alabama, or Kansas City BBQ? And there are even differences in the BBQ's depending on which part of the state, or which city in the state they're from.

It also depends on what base you like your BBQ sauce made from and what you're in the mood for.

That being said, really good BBQ is not over rated, however, there are a number of BBQ restaurants that are.

Just highlighted Sticky Fingers Carolina, right click and google did its thing. Linked right to it on amazon. I saw a 6 pack of them but you can probably find a single jar purchase if you look hard. Here, they are in every supermarket. I blend some with Sweet Baby Rays.
