  • So I bought some Sam Adams Boston Ale beer the other day. popped open a bottle and I did not care for it. What am I gonna do?

    I buy a family pack of wings and separate them. Then I soak them in the beer for 30 min. In the meantime I make my batter. I bottle of beer and one cup of flour and Cajun seasoning. I do not measure. I used one called Slap Ya Mama. It is a Louisiana made product. Do not know how far around the country it is sold.

    I fry 'em Take out and let rest for a minute or two. Must say the batter was tasty but too thick on the wing. The meat on the other hand was awesome. Just from a soak in the beer.

    I will admit the recipe was pulled off the net. Someone who was a Broncos fan. They used only salt and pepper as seasoning. I wonder if the climate had anything to do with the batter being to thick.

              • garlic ginger scallops with pastina.

                1 box of Pastina (this is the little stars)
                boiled in just enough water so it absorbs completely no need to strain.
                while it boils add some garlic powder, once the water is all gone add some olive oil to keep moist.

                dozen or so LARGE sea scallops
                chop and slice 4-6 cloves garlic as fine as possible
                Chop as fine as possible a small ginger
                heat pan with olive oil add garlic / ginger / small amount of black pepper
                Once the garlic is 30-40% cooked add the scallops
                Fry scallops on each side (careful not to over cook)


                Once done put the pastina into 2 large / deep plates
                half scallops to each plate
                leave the oil the scallops cooked in, in pan
                add pinch of white flower and a handful of fresh Parmesan cheese.
                allow to dissolve in the oil
                then use that as a sauce over top of the 2 dishes.

                You can sub scallops for shrimp if you want but who wants shrimp over scallops

                      So I have a brisket marinating with an enhanced dry rub.

                      I will let you know on the 27th. Maybe. Because you know how I am. Might be a few days before I log back in.

                        What times dinner? Goin to my Uncles house and he's got smoked ribs with a apple bacon BBQ sauce. Oh ya.

                        • Okay so you guys want the best crockpot mac and cheese on the planet? Try this;

                          3 cups uncooked pasta ( little shells or elbows)
                          15 oz Campbells cream of cheddar soup
                          3 cups shredded cheese ( sharp cheddar, monteray jack or whatever)
                          2 tablespoons butter
                          2 2/3 cups half and half.


                          Place soup, half and half and butter in the crockpot. Mix it up a bit. Throw in the pasta and half the cheese. Mix again. Then throw the rest of the cheese on top and cook on low for 2 hours.

                          Now if you wanted to throw in some ground up sausage, or peas or whatever else you like in there go for it!

                            • Cav it's great. I tried those little maple flavored Jimmy Dean sausage. Microwaved them for 45 seconds to cook a bit, ground them up in my hands, tossed it in and wow!
