Some degree of erection may be inevitable at times- especially if your libido is high and you have not ejaculated in awhile. As long as the degree of erection isn't excessive, you should be OK to stretch.
With time and practice, you should be able to control that from happening.

When I stretch, I usually start each grip with a short jelq or two which usually generates a light semi after three or four stretches. I have been doing this for over three years and it continues to happen despite the fact I have severe (diabetic) ED. I find with a slight semi I can achieve a better, more comfortable grip which I can holder for a longer period of time.
