I just processed olives from my tree in brine seems to have turned out ok .
The leaves make a good tea also, sometimes I mix it with lemongrass or green tea.Comment

It is a multi-day process that starts by putting the olives into a lye curing solution to leach the natural bitterness out.

Yes commercial processing often uses chemicals.
At home I just used brine it turned out well .
You can not eat them off the tree they are very bitter.Comment

I knew someone who'd cure their own olives using lye. They came out very well!
The methods used can vary, and a lot depends on the ripeness of the olives.

Stuffed with garlic is good, but MY FAVORITE ones are stuffed with Stilton or EXTRA SHARP BLUE CHEESE! YUMMM!

I have a couple of Mission olive trees on my vast estate.
I also have a couple of acres of weeds. A few months ago, I began transplanting volunteer seedlings from under the two mature trees out into the wastelands. Except for a couple that got dug up by beasts, all the infantrees seem to be doing well. In 20 years or so, I will sit on my porch and survey a veritable forest of olive trees!
