I think veganism not neccesarily is something which comes only from scientific or nutritional reflections. It comes rather from thougts on the functionality of consciousness and how food effects it.

The mind certainly is a powerful thing. I have a brother who is a vegan. The crazy thing is, once I switched from carnism to veganism, everything in the grocery store started looking like dead bodies. Chicken legs looked like parts of a chickens. Ribs looked like the slaughtered pig hanging from its hoof in my mind.
Ground beef started looking like cows going into a mincer. Packaged with worms coming out of it. Yeah, I know it's all "sterile", but the mind is a powerful thing (as all the guys here should know)... Once I saw actual dead bodies littering the supermarket shelves (after being off meat for a week or two) it really continues to push me away.
I can't even do it... I miss the texture of my Pulled pork BBQ, which is why I've recently gotten onto Jackfruit! Get my country fixing without the pork!
I have started maing Seitan (Wheat gluten) steaks to replace other "meat texture" foods. It's been easy once you find replacements...

I certainly agree that many of the cattle & chicken ranches don't always treat the animals humanely. Killing an animal is not something I enjoy doing. I'm not a hunter, or much of a fisherman. I grew up out in the desert of southern California where coyotes were thick and if you had small dogs or cats as pets they would be vulnerable to attack. So I learned at a very young age how to handle a .22 rifle and on a few occasions shot at coyotes and only once killed one. I don't enjoy killing animals.
I think about the thousands of years man has occupied the earth, and what he had to do in order to survive. I have teeth in my mouth that are called "canine" and are designed by God for ripping and tearing meat. I know that a certain amount of protein in our diets is necessary to maintain muscle, tendon and ligament. That protein from vegetable sources is the lowest grade / quality of protein on the PER (protein efficiency ratio) that you can eat.
I know several other people who are vegans that do so for health and personal or moral reasons.
The people who do it for health reasons have digestive disorders, but when I've talked the them about how to overcome digestive disorders I find out that they never supplement with quality probiotics, digestive enzymes or Omega 3,6,9 - all of which in most cases will cure digestive disorders.
The ones who are morally opposed to killing animals to eat for some reason find it perfectly acceptable that 1.5 million babies in the United States are aborted each and every year. Which I find very hypocritical because in my not so humble opinion a human life carries far more value than that of an animal.-Foldus,

It's mainly doctors and nutritionists still pushing for a low fat diet because the research hasn't found an explanation for issues like diabetes, heart attacks, or strokes. If you ask me, I think we should be eating more fat and less protein, starches, and sugars. It's not that the "low fat diet" is extreme; it's just plain wrong. It shares a history with the "eat less cholesterol" diet, which was equally based on false science (see the Framingham study, etc.)
Eating low or high in any of the macros is not advised: protein, fat, veggies. What is needed is adequate macros; but "adequate" is determined by your own genetics, lifestyle, training, etc. In other words, people probably have slightly different needs (say, more/less fat or protein etc.); and those needs may change over their lifespan.

A few further thoughts for food on diet and consciousness.
What I've realised is, while being vegan can help to to improve consciousness - diet alone without practice does unfortunately nothing. The most important thing to understand suffering is the relationship with ones fellow man. And therefore it's necessary to cultivate compassion, forgiveness, wisdom, ... through meditation, contemplation and such.
As far as I can observe it's greatly possible to higher ones consciousness without a specific diet but I also do think a meatless diet helps.
